The Grass is Greener!

Yes it is and we are lovin it. Especially since Daddy mows it every week with our new(used) PUSH lawn mower while we watch! Elizabeth loves to dig in the garden, she is worse than a rodent, but much cuter. Joe is busy...just sold the motorcycle so he's a little bummed about that but has some exciting things going for the truck. He bought a new carborator and has begun working on a hydrogen generator for it which he is quite extatic about! So just a little update on us, nothing too grand.

Gift of Optimism

I wish I had it all the time and could share it with everyone I meet. Life truly is a matter of perspective. Its so amazing how many times Joe has been so down about work, just hating it and within a matter of a couple days something will have changed his perspective and he is a new person with new ambition. He's normally so happy it really gets us all down when he is, but seeing how easily our thoughts can transform a situation gives me hope everytime. Hope is important.

Barbacoa

For those of you who have eaten at Barbacoa, let me know how it compares. For those of you who haven't you have to try this. Here's one of me and Joe's new faves...
No exact recipe and I kind of do it according to how hot I want it that night...
Take a little red onion (a Tbs or more) add a handfull of cilantro and throw in you food processor or cut finely. Add mixture to a can of corn (that is your salsa). Then I add a can of red beans. Cook your rice, shred cheese, lettuce and your good to go. Throw on a giant tortilla. You can add sourcream if you like or any kind of meat, but we like it without!!! OOH homemade guacamole is one addition I would recommend for those who like it!

If money and time permitted we would be there for you all so much more. I apologize for our absence in your life physically and at times mentally. But family is so much more than that, it is knowing that you can call on us and in one way or another we will be there for you.
